For the crust

¾ cup of flour

¾ cup whole wheat flour

½ teaspoon kosher salt

½ cup of butter or vegetable oil

¼ cup cold water

For the filling

1 cup of soy milk

6 cups of JUST Egg

1 and ⅓ cups of all purpose flour

Black salt to taste

¼ teaspoon of black pepper 

1 and a half cup of tofu

1 cup of broccoli

Half cup of capsicum 

Direction for Crust:

To make the crust, first mix the dry ingredients flour and salt evenly. This helps the dough to be smooth and prevent any lumps.

Beat oil and the chilled water with a hand whisk till it thickens.

Add the flour and knit for a few minutes to make a dough.

Use a roller to form the dough into a disk shape. Then keep it in the refrigerator for 20-30 minutes.

After taking out the refrigerator, roll it out to a quarter of an inch thickness and then cut the dough into a round shape according to the size of the muffin tray. Cut into a shape and size that fits your tray well. You can also use muffin or mini tart tin that has a removable bottom. When you are done with edging the crust, pop it in the refrigerator for another 15 minutes while we make our quiche filling.

Now that you are done with the crust, it’s time to prepare the filling and add it to the tray with crust. To prepare the filling, first you have to take a pan, a nonstick pan will be a great choice. Then remove them from the oven and let cool before removing from the tray.

Mince your fake meat and shape it like a firm patty as you like. 

Take out your Tofu from the freezer and drain it. Cut slices out of tofu then using a 3″ ring or mason jar lid to cut out circles. Also cut out 1.5″ egg yolk circle where you will be adding the JUST Egg. 

Season your tofu with a pinch of black salt. Heat a nonstick pan to medium heat and add one tablespoon of butter. place tofu then pour in just egg into yolk hole and fill half way Stir “yolk” with pan to help scramble in yolk hole. Flip the tofu “egg” scramble again then fill the rest of the way up. Keep cooking until the egg is fully cooked. Remove egg from heat and add to the burger bun.

1 cup full fat coconut cream

¼ cup and 3 tablespoon of JUST Egg

Step 1: 

Preheat the Oven

Firstly preheat your oven at 325 degree fahrenheit. prepare the oven safe bowls and deep dish you are going to use for your creme blue.

Step 2:

Cooking the Custard

Take a blender and mix all the ingredients in it and blend till they are thoroughly combined.

Pour the mixture in a medium cookware and cook on medium heat. Keep Stirring during the whole cooking time using a wooden spoon or silicone spatula. This prevents the custard from getting burnt. It may take 4 to 5 minutes for the custard to thicken to the expected texture. You will know it’s time to turn off the heat when the custard turns a pale yellow in colour and coat the back of your spoon. 

Step 3

Divide and pour the hot custard evenly into the bowls. Add the hot water into the deep dish to surround the bowls and make sure the water doesn’t cross more than half of the bowls height.

Place the dish in the preheated oven and bake for 20-30 minutes. It depends on the size of your bowls and how much custard you pour into one bowl. If you divide the custard into three parts then it will be done in about 25 minutes. 

Step 4

Take out the dish when it’s completely cooked. Let the bowls come to room temperature in the dish. Then place in the fridge to chill for 30 minutes.

Step 5

Before serving, take out the crème brûlée from the refrigerator and let it come to room temperature for about 10-15 minutes. Finally, sprinkle some sugar on top and caramelize it using a food torch till it sets completely.
